    I bought a King Crimson album sometime in the last year.
    Really disappointed.It was from one of their more recent tours and
    really sucked.Dint even sound remotely like the King Crimson I
    saw in concert in my Hippie days.They were inbetween Emerson Lake
    and Palmer and Pink Floyd as far as great Keyboards.
    I have to check my LP collection to get a title.

    I've always been impressed with how that band has successfully reinvented itself over the years...

    Some time ago someone asked me to post a pic of one of my home brews and here's the red ale I just popped the tops on last weekend:

    I haven't been able to find any red ales at the grocery store I frequent so I went ahead and brewed some on my own. I got lazy and brewed this using LME and grains and it came out real good. The ABV came in at 5.7% which is about average.

    The bubbles are the giveaway.The head on that beer has rather
    fat lazy bubbles.Which is a sign of poor beer construction.
    The best beers have small well-knit bubbles that kind of cling
    to the side of the glass.The worst beers have fat lazy bubbles that
    disappear rather fast.

    Thanks - now that I'm through cutting my teeth I plan on going all-grain this winter. I finally mailed a sample of our well water off to Ward Laboratories this week to get tested and after I get the results back I'll be ready to go.

    All grain is a pain. More work, more clean up, more time but is the difference between a Betty Crocker cake mix and building it from scratch. Been along time since I poured in extract.

    That was actually my first taste test of that batch and while it tasted fine I think it needs at least another week or two of bottle conditioning. I usually let my ales sit longer than I did with that bottle of red but my impatience got the best of me.

    It's all good. I want to be able to control the entire process and ingredients and going all-grain is the only way I'm going to be able to do that. I've learned a lot brewing different styles with extracts but I'm ready to move on. The only thing I find a bit daunting going in is how complicated all the chemistry can get. I have a feeling it's going to take me some time and mistakes to get that ironed out.

    After determining that it fermented enough { with the hydrometer }
    then it has to sit for a spell.Generally at least one month.A year will probably
    give the best taste.It should bottle condition in a cool dark place.
    NOT the Frig.

    The problem with grain { even half grain and half extract } as I recall
    is contamination.Very problematic since grain dust is hard to pinpoint.
    So when crushing grain it must be done quickly and with the right
    technique.But yes,all grain is considered intermediate to advanced
    home brewing.

    Yup, I stick the bottles in a cool dark closet and generally let them sit for a month or two, although I've gone 6 months to a year. I usually pop one open around the 2-3 week mark to check the flavor and carbonation which is when I took the picture of that red ale. I might pop open a smaller 12 oz. bottle this weekend to check how things have progressed over the past week and take some notes but judging from last week's test the brew probably won't be ready until some time between Halloween and Thanksgiving.

    When you went to bottle the fermented beer how did you add the sugar.
    Did you use beer sugar and mix with a little leftover wort or some
    fermented beer { around a quart } in a saucepan and heat over
    the stove and then add to the fermented beer and stir and then
    pour into bottles.I guess you could just take a little sugar and pour
    into each bottle and then add the fermented beer and cap.

    I did it the way you said in bold face above, although the priming sugar went into a saucepan of hot water (about 2 cups) instead of wort. Then I mixed the sugar/water solution and the wort into a bottling bucket and bottled the beer.

    The replacement for this door latch controller is $184 at the Ford dealer, or $20 at the junkyard.
