As Opposed to Pointy cheeses.Or maybe a 90 + lb. round
block of Parmigiano Reggiano which runs in the neighborhood of
$ 1,600.Definitely not sought after in yer average Texas Roadhouse.

The sharper the cheese the better it tastes.

But not the most popular.Like Velveeta or any mild cheese
used to make Taco sauce. There aren't many cheeses I won't
touch.Limburger being one.Or one of the triple cream French cheeses
    like Saint Andre.

If you bought a precut piece of Stella Fontina at a grocery store it doesnt come close to resembling the true flavor of Stella Fontina cut from a round block from the Italian store. Same with Parmigiano Reggiano or Romano. Fresh cut grating cheese off a large round is sharp and you can see the oil in places in the cheese. Same with provolone. Not provolone in slices. A fresh cut piece of provolone is sharp and has almost a creamy texture. Not mild and rubbery.
Grocery stores dummied down people's taste buds.

    Me too.
One time I was talking to my sister about brie. I said, how come those French women can eat all that brie, cheeses, breads and can still stay so thin.
She said, That's because they don't eat the whole thing.
    Ahahah Oh.

My Big city Kroger's store has an Olive bar and also a cheese shop
c/o of Murrays of New York city.Murray's is obviously expensive.
They carry the finest cheeses, and bagels and gourmet stuff.
Plus their name is plastered all over.Their little gourmet items are
too pricey.Like their Gourmet packaged Italian sausages, pepperoni
and what not.I rely on Boar's head for that stuff.Plus they no longer
carry my favorite of Cheese. That being Huntsman.
I have to settle for Double Gloucester w/chives.

There was a lady who named her pig Tuna. If I had a pig, which I never would, Id cut to the chase and just name it Bacon or Dinner.
I had tuna salad yesterday with rice crackers. Ive been gluten free and sugar free since I said I was going to do that a while back. Salteens are way better than rice crackers. lol

Got kinda warm today. One crawdad came out of his pipe, picked up a white rock and brought it inside with him. He looked like a complex dirt mover. I guess that's what he is. Interesting...

Good eating too. I’ve flown live crawfish in from Louisiana I think 4 times now. Usually 60# or so for a block party boil. The last time was for my fireman buddy that had leukemia. Unfortunately he passed a year ago this passed Xmas. But we partied hard before that. Center of the picture, blue shirt, sunglasses with arms folded is me. To my right with sunglasses on top of his hat is my buddy. RIP chief!
