Ah, chicken and rice. A kind of pilau.

    Frogmore stew looks interesting too.
Smoked sausage and shrimp is an unusual combination.
Can't think of another recipe that uses both except maybe a paella.

    Pro-tip.
In England shrimp refers to tiny little things. What you call shrimp we would call prawns.

I think of prawns as these ridiculously large shrimp, like damn near a ft long.
Scallops are a bi valve shellfish. The recipe calls for a bit of canola oil but I think butter would be better, need a hot skillet.

I'd like to experience creole food.
    Sounds delicious.

    Prawns are different from shrimp.

Here, we get shrimp based on count per pounds.

16/20 count is the really big shrimp, whereas really small shrimp would be 60/70.

Prawns live in fresh water/brackish. Shrimp lives in the ocean.

Some of it is very tasty. Jambalaya isn't easy - it's all about the roux.

Inland about 60 miles in SW Florida. I got 2 pounds frozen, they come from Peru for 24$. I'd rather have fresh Fl. scallops. There is a season here and bag limit. People snorkel in waters of ten ft or so for them.

It was quite the culture shock (not sure if shock is the right word) moving from Vegas to South Carolina (via the military). The food was a great experience for me except the buffets in Vegas were amazing.

    I'm familiar with scallops.
English and French fishing boats came to blows a couple of years ago in what came to be known as the scallop wars.
Due to unfathomable EU rules English scallop boat season began a month before the French fishermen's season.
It got quite nasty with French boats ramming English vessels because they got the best scallops because of the head start.
The Royal Navy got called in to provide protection.
Nearly as bad as the infamous cod wars with Iceland and Norway. That made an Icelandic fisherman with the name Captain Kirk very famous.
The English were in the wrong there as they threatened the sustainability of cod stocks in Icelandic waters.

We went to Vegas for the first time, about five years ago. We ate at three buffets, and were seriously disappointed in the food. All three buffets were at one of the biggies on The Strip. There was a ton of food, and lots of variety, but it all mostly tasted "meh."

I guess I should have mentioned I grew up there when the mafia owned it, good times. Now it is all about corporate bottom line profits, mostly. There are still some good places if you take the time to find them.

Just saying, if you order shrimp in England you are likely to be disappointed.
We tend to make potted shrimp. Boiled shelled shrimp served cold and thickened with set butter. Usually seasoned with mace.

Funny how we eat something like shrimp but are repulsed at the idea of eating insects.

I swallowed a live gulf killifish of about 4 inches once, after cast netting for bait. I would get nauseous at the sight of bait for the rest of the day. Probably not a good idea, might get parasites that way. Was about the same size. upload_2020-9-27_19-6-58.jpeg

I haven’t been there since the early 90’s. It was good and cheap then. I’ve heard from many people the quality has gone down and the price way up

Yes. We paid a LOT. We were hopeful. Not so much. Even if we do return to Vegas, we will go with some famous chef's restaurant, over that. We ate at Bobby Flay's burger place twice. Burger is a favorite, and the burgers were spot on.

That’s good to know there is good food yet, just not at the buffets. I don’t think I’ll ever have a reason to go back. Would like to see Shot Show but don’t have press credentials or a related business so probably won’t happen. Sigh.

I’m pretty sure buffets not at peak hours were just a couple bucks when I was there.

If this works as well as the video says it does I'll be eating a lot more boiled eggs.

So what’s the verdict? Should I try it? The pullets are starting to lay so will have more eggs again. It was pretty scarce for a while with just a few old hens this fall. Only an egg or less a day. Hard to deal with when your used to having all you want!

Ah, forgot all about it so haven't tried it yet.
We are on avian flu alert here at the moment so our hens had to be taken inside. What it means in practice is that a solid roof had to be put over the coup and run to keep them apart from wild birds to comply with the law.
