I don't have any idea what your point is here. But, ... We made cows to be what they are today - just like we made wheat, apples, and pretty much every other crop to be what it is today. The amount of butterfat and the volume of milk produced by a cow has to do with how we compensate dairymen for their product. So, we bred great big Holstein cattle to give large volume without as much regard to butterfat. We also bred Jersey cows to give not as much volume, but a lot more butterfat. But, there are comparitively few Jersey cows in America, because the market is tuned to volume over content. There are similar decisiions made about size of calves at birth. Big calves are great, but it can lead to more frequent distosias requiring vertrinary attention and the possibility of losing both calf and cow. Like others of our staples, cows are pretty much man made through the power of evolution with selection provided by ranchers over large time.
