no cholesterol pudding, halfway to a custard

    This is a zero cholesterol pudding I invented, and there are some places you can adapt it to your own taste. I don't myself like things to be too sweet, so many people might like to add more sugar. The gelatin-flour mix determines texture, so you can experiment with that until you have it exactly to taste. The flour makes the pudding less like jell-o and more like custard.

    Mix dry ingredients together in the stove top pan you will cook this in.

    2 cups nonfat powdered milk
    1/2 cup sugar (or to taste)
    1/2 oz. unflavored powdered gelatin
    3 tablespoons flour

    Add 1 cup water and stir into a smooth paste, which prevents lumps
    Stir in 4 tablespoons walnut oil or canola oil. Can add more oil to taste.

    Stir in an additional 3 cups water. If desired, another quarter cup will make the pudding lighter

    On medium heat, stir rapidly until there is just a slight thickening and light sauce appearance, or the spoon encounters the first few bits of solid when scraping across the bottom of the pan. The mixture wll still be quite thin when hot, but will set when cooled.

    The moment you take the pan off the burner, stir in one tablespoon real vanilla. Or you can stir in another liquid flavoring. I like about 3/8 cup lemon juice stirred in at this time, though it does cause some curdling, which however tastes good to me.

    If you add dry flavoring, do it at the beginning with the dry ingredients. If you use between one and three tablespoons of unsweetened cocoa, also increase the sugar.
