Literal interpretations of religious texts aside, theres no reason that evolution and creation must be mutually exclusive. Evolution can be accurate with 'God seed' or 'intelligent design' dynamics, or evolution may simply be the scientific description of our physical progression while creation is the metaphorical description of our spiritual progression. Elements of creationism (intelligent design in general) would actually round out some of the problems with evolution quite nicely if found to be true. Just because you dont believe doesnt mean it isnt possible. Adults learn tolerance and keep an open mind (you grow up).

As far as literal interpretations of religious texts go- it doesnt work. They're all contradictory in literal terms, and given the parabalic and metaphoric nature of 'word of mouth' history and the subjectivity of spirituality, spiritual subjects and texts are best left to individual interpretation until we are able to more concretely and verifiably explore and record the spiritual realm (which is not outside the possibility of technological progression).
