Yes, the older women in my extended family in Louisiana have all found ways to cut down on the fat and the prep time. I watched my wife's mother prepare a crawfish etouffee with Cambell's cream of Shrimp and Cream of Celery soup as a base in horror - it was better than the old tried and true recipe.

I am used to really white gravy for this SOS breakfast. So I did not want to brown the flour at all.

Military cooks probably did not have time to brown it.

They had to mix everything fast and get it cooking to get the mess hall open by 5 a.m.

There would have been oatmeal, wheat-meal, scrambled eggs from a box, fried potatoes from the freezer, fried sausages, fried bacon, white gravy with beef in it, toast, bread and butter.

Drinks would have been coffee, cocoa, tea, and milk.

    Simple but not bad tasting.

Amazing this new technology. Imagine doing something the easy way. I love Lousiana cajun food and so did my Mother.

You can stir flour in hot oil for at least 20 seconds without browning it. It does get rid of the taste of raw flour, but I have seen may cooks use raw flour as a thickener. You can get away with it - depends on the dish.

The soup companies have come up with some good canned soup bases.

I buy them all the time and then add meats and vegies and noodles and dumplings to them.

This is great for a "supper" meal for dinner versus a bigger meal before bed.

Soup is a classic lunch meal, but I prefer it for supper instead.

For lunches I prefer a full course meal of meat, carbs, vegies, gravy -- a really big lunch.

The raw flour worked great for me as a thickener.

I did not use a lot of oil. I never do.

So mixing the oil with the water and flour worked perfectly for a really white breakfast gravy over the toast.

I didn't know they were brothers either! Can you imagine what it was like at family gatherings?

I met Larry not long before he died. I was working on some medical equipment where he was in hospice. But by then he wasn't a happy camper.

Would have worked great on keeping our back porch clean. Had one of those cranes fly over and...yep, sprayed everything. Windows, chairs, grill, floor.

Gotta love Mondays after taking leave for a bit. You know what, I'm not liking being stuck behind a computer all day as much as I thought I would ;)

This is a classic case of, you need to look here so you aint looking there.

My guess is she has 6 or 8 toes on each foot and loves to wear open toe shoes.
