But if "could have easily been done" is the standard, the day after a holiday during a week in which a lot of people take vacations toward the end of the work day when most people would be out of the office already and those still there would be distracted by their evening plans about to happen, packing up and going home, etc, would be a good time to swipe data without being detected.

A HDD is physical evidence.
