They are often nothing more than noxious weeds ruining my lawn or flower beds. But, this article sets the record straight. In addition to Dendelions, the article includes, Purslane, Clover [makes absolutely great honey], Lamb's Quarters, Plantain, Chickweed, Mallow, Wild Amaranth [read something about this before], and Curly Dock [never heard of this and don't recognize it. If you watch shows from England like River Cottage, you get a sense of the variety of plants people can eat that they dont anymore. Even nettles, handled correctly can apparently make a very appetizing soup. I doubt the English had a mortgage on this kind of knowledge. So would be interesting to see if there are any plants out there humans have not figured out how to eat lol
